Well it has been a rough few days (and not set to improve any time soon 😞) But as it is all out my control I have decided that it's "positive head on, chin up and keep on going"...

I received my first Recipe box yesterday.... this one was from HELLO FRESH ...with the discount it came in at £22.50 (although I should get and extra £6 back in cash back 😉).  I have gone for the 2 person box as we are cutting down portions and the only other option is 4 persons which will create waste I'm trying to stop.  I did see some reviews saying that the portions were far too small - well baring in mind I don't eat like a sparrow, I have been left wondering just how much some people can eat as we are finding them more than enough for the 3 of us 👏.
The first one was CREAMY GNOCCHI WITH MUSHROOMS AND BROCCOLI
As you can see this made 4 servings and I actually struggled to finish mine -the other is in the fridge and I will have that as a quick lunch tomorrow.  It went down well, and has gone on the "have again list"

Today's dinner was PAN FRIED TURKEY WITH CREAMY MUSHROOM SAUCE, PANCETTA  ROAST POTATOES-WITH WILTED SPINACH.  Again there was plenty for us, I did add frozen peas though for a bit of "freshness".  Again, we all loved it and Charlie actually devoured the spinach first 👍



So far, so good -the ingredients are good quality and good brands-  Pataks, longley farm and so on and I'm really enjoying just getting everything on the worktop and cooking (no searching for things, or finding things have been eaten/gone off )
For the rest of the week we have :-
Dukkah crusted chicken
Fragrant Caribbean beef
Pork loin steak with peppercorn sauce

Next weeks -17th is due from GOUSTO(only 4 meals in this one) ..so far I am going with :-
Smoky chicken n Mushroom Linguine 
Pork n sage meatballs with onion gravy
Lebanese spiced beef pittas and Tahini yogurt 
Loaded chilli beef cheese fries with zesty slaw

the 24th is also GOUSTO (4 meals ) :-
Chinese style beef n green pepper stir fry
Creamy haddock linguine with tomato n chilli
BBQ chicken, apple slaw and wedges
Cheesy cottage pie 

the 31st is back to HELLO FRESH :-
Balsamic steak with wedges and red cabbage
Thai pork stirfry with green beans, holy rice n basil
Tray-bake chicken with roasted tomato salad and minty salsa
Orzo risotto with mozzarella and roasted tomatoes
Veggie shepherds pie with broccoli.

By the end of the 4 weeks I will have used the discounted boxes so then will be when we decide if we are still wanting them at full price - I'm also considering trying a week at M&S (my mum and brother shop there and I do love some of their food).  I will be looking at their raw ingredient packs to cook at home rather than the ready meals  as we don't seem to get on with more than the occasional ready meal.... the dine for £10 deal will be looked at though (although we could do without the dessert 🐽), hubby does like a glass of wine of a weekend so that won't be wasted .... 

Right enough waffle about food for now... but I will be back *mwahaha*

Day 4 of our "Hello fresh"recipe box, and I thought I was chancing my arm a bit with this one... I LOVE coconut milk but wasn't sure hubby n Charlie would..plus the spices for charlie -but I needn't have worried -we have another hit 👍, so much so that when I said hubby could have the rest for lunch tomorrow Charlie was most upset that he was missing out lol.  Luckily there was enough left for both.  The photo shows the leftovers, so we are in fact getting 3 adult and 2 child servings from recipes suggested for just TWO 😍.  This was Fragrant Caribbean beef and the rice part was cooked in coconut milk with sweetcorn and turtle beans,  there was a fair bit of kick in the meat spice mix (ground coriander, cumin, peppercorns amongst others) BUT there was some mango chutney that balanced it out really well (should have been chopped apricots too but I know hubby hates those -so I will eat them).  Charlie is really amazing me, even though I know he is a good eater and w
2018 will bring what it brings but I'm determined to get as much as I can out of it! I have decided to run a blog to encourage me to find the positives in each day, to push me to do more and to do what I enjoy. This year my goals are to get myself healthier and my family too.... some lbs to be lost, more exercise needed, no fads, no crash diets, no gimmicks... healthy eating, exercise found not through the gym but by moving more.  So the allotment is really going to be coming into play this year -providing LOTS of exercise and if we do as well as last year LOTS N LOTS of lovely fruit and veg 😍.  I love to cook so there will be lots of foody photos and hopefully lots of recipes, photos of the allotment and growing hints n tips -although we are learning as we go 😊.
